The Easiest Crunchy Carrot Side Dish

Starting with this sweet and savoury crunchy carrot side dish - which includes the star of the show Fuoco Chilli Oil*. 


SWEET & SAVOURY CARROT SIDE DISH

Ingredients

+ Fresh bunch of carrots, well scrubbed (the more raw and organic you can get them, the better!)
+ 1/2 tablespoon olive oil
+ 1 tablespoon of honey or maple syrup
+ Fresh black pepper
+ Pinch of sea salt
+ 250g plain unsweetened or greek yoghurt
+ Zest and juice of 1 lemon
+ 2 garlic cloves
+ Chilli oil
+ Pine nuts lightly toasted
+ Fresh flat leaf parsley, chopped

Method

  1. Preheat oven to 180C. Drizzle your prepared carrots with olive oil, honey, black pepper and sea salt. Bake for 20 - 25 minutes, shaking the pan once half-way through.

  2. Mix the juice of 1 lemon and crushed garlic cloves with the yoghurt. To plate spoon the yoghurt onto an aesthetic plate. Transfer your cooked carrots and garnish with lemon zest, pinenuts, more spoonfuls of yoghurt, parsley and chilli oil.
